This veggie packed stir fry is a total treat that we recommend for any weeknight dinner. It’s so good especially when you choose to make it with Japanese Noodles and PACK it with veggies.

The Veggie List: (You can add MORE if you want!)

Broccoli

Peppers: Red, Yellow, Green

Sugar snap peas

Tiny corn

White or Yellow Onions

Carrots (Shaved!)

Celery

Watercress

Sauté all of these good nourishing veggies together in about a tablespoon of oil

Cook the Noodles or Rice:

Cook your noodles or rice according to package instructions. Here we made the stir fry with Japanese Buckwheat noodles.

Sauce:

You can whisk together soy sauce, garlic, honey, and sesame oil, or even ginger cubes!

Top it:

Garnish and top time! You can add sesame seeds, more carrots (shredded), and if you’re into fusion, consider some homemade croutons!
