Healthy Pumpkin Chocolage Chip Cookies are a real treat, especially in Autumn, but in actuality, they are the ideal breakfast treat with coffee or tea, or wonderful for a mid afternoon snack!

If you’d like to try making a vegan version of these wonderful warming Pumpkin Chocolate Chip Cookies, you can opt for removing the eggs, but you’ll need to reduce the dry ingredients by a half cup. These just have a little pumpkin, but keep in mind that pumpkin is an excellent healthy choice to add into your diet! For fat, these cookies have a bit of peanut butter, which is a good source of protein, and leaves you energized and full for longer. Protein is super important when it comes to building muscle and burning fat. And so, now that we’ve established that these cookies are a wonderful healthy choice, here is the super simple recipe. Pumpkin Chocolate Chip Cookies: Method and ingredients

Preheat your oven to 350 Degrees. 

Dry ingredients (whisk together)

1 Cup Whole Wheat Flower

1/2 Cup rolled oats

1/2 tsp salt

1/4 tsp baking soda

1/4 tsp pumpkin pie spice or cinnamon

Wet ingredients (mix together)

1/2 Cup Pumpkin Purée

1/2 Cup Peanut Butter

2 Eggs

1 tsp Vanilla Extract 

1/3 Cup Maple Syrup

1/4 Cup Agave Nectar

Mix the dry ingredients into the wet, then add about a half cup of chocolate chips!

Add in 1/2 Cup Chocolate Chips

  • 1/4 – 1/2 cup chocolate chips

Scoop with an ice cream scoop or two spoons onto a silpat lined baking sheet. Bake for 10-12 minutes!
