We have been so excited about delicious, Mediterranean style sides lately! Something that almost says, “move over main course, and have a look at me!” Ok, just kidding, no competition here. But, if there were a competition, our Fresh Farro Tabbouleh would probably take first prize.

 

Farro Tabbouleh Ingredients

 

 2.5 cups farro (we picked ours up at trader joe’s)

 1 cup fresh parsley

 

 

¾ cup fresh mint

6 green onions

A quarter of a cup olive oil

A half of a cup fresh lemon juice

2 seedless cucumbers

Salt and pepper

1 can of rinsed chickpeas

1 8 oz cube feta cheese cubed

A cup pitted kalamata olives

 

 Recipe for Fresh Farro Tabbouleh

 

 Let’s start with the Farro! We are all about this deliciously satisfying and healthy grain these days. We’ve found to be an ideal base for so many delectable sides. Rinse your farro, and cook it with about 4 cups of water, and a tablespoon of salt. (Or, you can follow the directions on the back of your package if you have one. We know you’re all busy, so we’re definitely all for any quick cooking varieties! Bring the Farro to a boil, then lower to a simmer, cover for about 20 minutes, and then drain any remaining water.

 

Copy your parsley, mint, onions, and cucumbers, and place them in a bowl. Add in your Kalamata olives, and chickpeas. Finish with your beautiful feta.

 

In a separate bowl or measuring cup, combine your olive oil and lemon juice. Whisk in a teaspoon of salt, and a bit of pepper to taste. Mix in the Farro, and add your dressing. Add salt and pepper to taste. We find this is highly personal.
