Heathy Honey Peanut Butter Cookies

These healthy honey peanut butter cookies are sweet tasting, but aren’t made with refined sugar. (Though if you’d like to make them a little more special, you can just dust a bit of powdered sugar on top once the cookies have cooled.

Dry Ingredients for Healthy Honey Peanut Butter Cookies

For the wet ingredients, make sure to blend then really well. You don’t want any big clumps of peanut butter appearing. And as for the honey, we love pure raw honey.

¾ Cup Honey ¾ Cup Creamy Peanut Butter 2 tbsp’s maple syrup 2 tsp’s pure vanilla extract 1 large egg

Wet Ingredients for Healthy Honey Peanut Butter Cookies

One of the best parts about this recipe is that is doesn’t require a multitude of ingredients! Just a handful of dry ingredients, and if you don’t want to use your mixer, you can simply use a whisk, and a wooden spoon when combining the wet and the dry ingredients.

1 ½ cups all purpose flower ½ tsp baking powder ½ tsp salt

Method

Preheat your oven to 350 Degrees F. Line a baking sheet with a silpat. Mix together ¾ cup honey, ¾ cup creamy peanut butter, 2 tbsp’s maple syrup, 2 tsp’s pure vanilla extract. Crack one large egg into a bowl, and then add it in to the mixture. Make sure everything is smooth and blended well. Next, sift together your 1 ½ cups of all purpose flower, ½ tsp baking powder, and ½ tsp salt. Slowly mix the dry ingredients into the wet ingredients. Keep in mind that the honey will make the mixture rather sticky, so make sure to use a wooden spoon if you’re doing it by hand. Scoop the batter out in heaping tablespoons onto your lined baking sheet. Press downs slightly, or whack the cookie sheet on your surface a few times to let them spread out a little bit. Bake for 12 Minutes at 350 Degrees. Once cool, if you’d like you can use a sifter to put a little powdered sugar on top, or just leave them as they are. These are particularly enjoyable while sipping a cup of honey chamomile tea. Enjoy!
