If you love healthy cookies, you are going to adore these Peanut Date Oat Healthy Cookies! They are so simple to make, and are done in a flash. Maybe even make them before bed in order to have a wonderful morning cookie to look forward to!
Ingredients for Date Oat Healthy Cookies
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 cup peanut butter (or you can do a quarter cup peanut butter with a quarter cup almond butter
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/2 cup chopped pitted Medjool dates
- 1/2 cup walnuts (they are so good for you!)
Method for Protein Packed Date Oat Healthy Cookies
It’s SO easy! Just Preheat your oven to 350 Degrees F.
Whisk together a cup of rolled oats with a half cup almond flour, a 1/2 tsp salt, and 1/2 baking soda.
Next, mix together the wet ingredients, 1/2 cup nut butter with 1/4 cup maple syrup and 1 tsp vanilla extract. Chop your pitted dates and walnuts (or pecans are good too!).
Use an ice cream scoop to scoop the dough, and place on a lined cookie sheet.
Bake for 13 minutes, and after you let them cool, enjoy, or save for Fika or to start your morning off right!
