Homemade Energy Bars Recipe

  • 1.5 Cups Quick Oats
  • 1 Cup Peanut butter or Almond Butter
  • 1/2 tsp salt
  • 1 Tbsp Olive Oil
  • 1 Tsp Vanilla extract
  • 1/2 Cup Honey
  • 1 Cup Finely chopped almonds or walnuts
  • 1/2 Cup Craisins, Raisins, or Golden Raisins
  • 1/2 Cup Dates
  • 1/4 Cup Mini chocolate chips, optional, or chopped 70 percent dark chocolate chips!

Method for Homemade Energy Bars

Mix 1 1/2 Cups Quick Oats with 1 cup of finely chopped nuts and 1/2 tsp salt.

Mix together 1 cup nut butter with 1 tbsp olive oil, 1 tsp vanilla extract, 1/2 cup honey.

Blend the nut mixture with the honey mixture.

Next add in 1/2 cup dates with 1/2 cup craisins, raisins, or golden raisins. You can optionally add in about a quarter cup of mini chocolate chips, or chopped dark chocolate chips. If you like shredded coconut, you can add that in too.

Place a piece of parchment paper in a 8×8 baking dish and flatten into about 1 1/2 inches high. Cover and refrigerate for several hours.

Slice into bars, and you have the perfect energizing treat!
