Healthy-ish Peanut Butter Cups

These peanut butter cups are not too bad for you! They are cute and fun to make, and better for you than store bought!

For the chocolate layer, blend: 

1/2 cup coconut oil (melted

1/4 cup cocoa powder

3 tbsp maple syrup or honey

1/2 tsp vanilla 

Place it into the freezer for about 5-15 minutes

Layer it into a square baking dish lined with parchment

For the peanut butter layer, mix together: 

1/2 cup coconut oil, melted

1/2 peanut butter (salted, chunky peanut butter)

1/2 cup maple syrup or honey 

1 1/2 tsps vanilla

2 tbsp chia seeds (optional)

2 tbsp very finely chopped hazelnuts (optional) 

Pour the peanut butter mixture on top of the chocolate mixture 

Place back in freezer for 15-20 minutes.

Remove from the freezer and cut out your favorite cookie cutter shape!
