Let’s Make Gooey & Healthy Sweet Potato Brownies!
Healthy Sweet Potato Brownies are an all time favorite in the Fittbe Kitchen. They are actually nourishing as the sweet potatoes are high in fiber, and have no refined sugar besides what is in your chocolate chips, so not much to worry about! (We do opt for chocolate chips, because in seeking all the good things, you have to live a little! Bonus, the chocolate is an antioxidant boost! If you want an extra special treat, you could whip some cream to top them.

You can absolutely bake with less refined sugar, and with healthier fats like nut butters (which give a great protein boost)! Dessert never tasted so satisfying!
Baking with nut butter is not low calorie, but it certainly is a great protein boost! These scrumptious treats will be ready to enjoy in just over half an hour!
Ingredients for Healthy Sweet Potato Brownies:
- 1 cup mashed cooked sweet potato
- 1/2 cup almond butter (or any nut/seed butter)
- 1/2 cup maple syrup
- 1/2 cup cocoa powder
- 1/2 cup almond flour
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup chocolate chips
- 1/2 cup chopped walnuts
Method for Healthy Sweet Potato Brownies:
Preheat oven to 325 Degrees.
Poke a couple of holes in a sweet potato with a fork, then roast at 400 degrees for about 45 minutes. Judge time by size of sweet potato. When cool, scoop the sweet potato out of the skin. Mash it, and add your almond butter or peanut butter, and maple syrup, plus vanilla.
Mix together the dry ingredients, your cocoa powder, almond flour, baking powder and salt.
Add the dry ingredients into the wet ingredients, then add in 1/2 cup chopped walnuts and 1/2 cup chocolate chips!
Grease an 8×8 baking dish with olive oil (healthier!), and use a spatula to spread the batter into the baking dish.
Bake at 350 Degrees Fahrenheit, for about 30 Minutes
