A nice cookie with a cup of coffee in the morning or your afternoon tea is such a treat. You can feel good about enjoying these cookies and sharing them with your family because they are sweetened mostly with honey, and feature healthy olive oil, oats, raisins and dried cranberries! We like adding chopped walnuts for a little extra protein and their great flavor.

Preheat oven to 375 Degrees.

Wet Ingredients

Mix together 2 eggs, 3 tablespoons honey, a tablespoon of agave nectar and 1 tablespoon of vanilla extract with 2.5 tablespoons olive oil and set aside.

  • 2 eggs
  • 3 tablespoon honey
  • 1 tablespoons agave nectar 
  • 1 tablespoon vanilla extract
  • 2.5 tablespoons olive oil

Dry Ingredients

In a separate bowl, mix together all of the dry ingredients.

  • 1/2 cup whole wheat flour
  • 1/4 cup unsweetened cocoa powder
  • 3/4 cups old fashioned oats 
  • 1/8 teaspoon baking soda 
  • 1/8 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup craisins / dried cranberries
  • 1/2 cup raisins
  • 1/4 – 1/2 cup chopped walnuts
  • 1/2 cup semisweet chocolate chips

Method: Stir the dry ingredients into the wet ingredients until well blended. Let the mixture sit for about 15 minutes to soften the oats. Finally, bake at 375 Degrees F for 12 Minutes!
