These chocolate muffins are like little cakes, almost like a mini chocolate cake, so we aptly named them “mufcakes!” They are very chocolate tasting, and they are sweetened with honey apart from the chocolate chips (you could use semisweet, or 70 percent cacao!)

The lined baking cups work wonderfully.

Preheat oven to 325 Degrees Fahrenheit. Prepare 12 – 14 Baking Cups

Start by wishing together dry ingredients, then set aside.

  • 1 cup whole wheat flour
  • 1/2 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • ¾ tsp baking soda
  • 1/2 teaspoon ground cinnamon
  • ¾ teaspoon instant espresso powder
  • ¼ teaspoon kosher salt

Mix together the wet ingredients until well blended. 

  • 2 eggs
  • 1 cup greek yogurt
  • ½ cup honey
  • ¼ cup olive oil
  • 1 tsp vanilla extract

Add the wet ingredients to the dry, then stir in:

  • 1/2 cup chocolate chips
  • 1/4 cup chopped walnuts (optional)

Distribute the batter amongst 12-14 baking cups, and add a few more chocolate chips to the top!

Bake for about 20 minutes until a toothpick come out cleanly! Enjoy with a cup of coffee or at tea time.
