This is a wonderful recipe for any time of year! It’s a real treat, combining the lemon pasta with the delectable salmon. We love to use torchietti—or “little torches,” which we came across at Trader Joe’s, though make note that some of Trader Joe’s products can be seasonal. So, you might need to hunt for it a little. The torchietti are a lovely shape, and the presentation is fantastic. Plus, they are organic. As most of you know, we are committed to eating organic food whenever we can here at Fittbe.
Ingredients to Make Lemon Pasta with Filet of Salmon
1 LB Lemon Torchietti Pasta, or your Favorite Pasta!
1/4 Cup Good Extra Virgin Olive Oil
1/2 Cup Parmesan Cheese, Grated
6 Cloves Fresh Garlic (Or Trader Joe’s Frozen Garlic Cubes). 4 for the Pasta Sauce, and 2 for the Salmon
2 Lemons
Zest of 2 Lemons
Salt and Pepper, a Few Red Pepper Flakes if you Like
2-3 Tablespoons of Butter
To Make the Lemon Pasta
If using the frozen garlic cubes, heat them so they thaw, and mix with 1/4 cup olive oil, the juice of one 🍋 and a half lemons. (Save the other half for slicing lemons to top the salmon!)
To make the Lemon Pasta, salt and boil your water, and cook the pasta according to the instructions. Reserve a cup of water before draining the pasta. Stir in your Parmesan, olive oil, garlic, lemon juice, a tsp of salt and black pepper to taste, and set aside.

To Make the Salmon
Start with a nice piece of fish, (Salmon Filet, about 12 make sure you check the dates on the package so that you have a very fresh one.
Preheat your oven to 400 Degrees.
Rinse the salmon, and bolt with a paper towel.
Melt 2-3 tablespoons of butter with 2 cloves of garlic (we prefer the little frozen cubes).
Sprinkle salt and pepper over the salmon.
Next, brush the butter garlic mixture on the salmon.
Slice lemon and arrange on top of your salmon.
Bake at 400 Degrees for 10-12 Minutes, or until it reaches at least 135 Degrees. Tent it and let it sit for about 5 minutes.
Bring the Meal Together
Serve the pasta in nice big bowls, and top each with shredded parmesan cheese and a bit of fresh ground pepper and red pepper flakes if you like. Then place that beautiful piece of salmon on top or your glorious pasta. Enjoy and Bon Appetite!
