Healthy Harvest Oatmeal with Berries

This healthy harvest oatmeal with berries is one of the nicest breakfasts. It is cozy, and so nutritious, especially if you add walnuts and yogurt. The yogurt gives you a nice dose of probiotics, and the walnuts feature antioxidants and polyphenols, and even vitamin e!

This serves 2 people a generous portion!

1 Cup Quick Cooking Oats

2 Cups Water

1 Cup Greek Yogurt

Walnuts

Organic Berries

1 tsp Pumpkin Pie Spice (or more if you like)

Cinnamon

2 tbsp Maple Syrup

Raisins

If you like collagen, you can add that in too!

Method

Cook quick oats and a pinch of salt over medium high heat. Once simmering, reduce heat to low. Continue to cook for about 3 minutes, stirring until the water is mostly cooked into the oats.

If you’re adding collagen, add 2 scoops into the oatmeal pot at this point. Next add about 2 tbsp of maple syrup and a quarter cup of raisins. Mix in cinnamon and pumpkin pie spice.

Distribute into bowls.

Add a scoop of yogurt to the top, sprinkle your chopped walnuts, and fresh organic berries. Drizzle with a bit more maple syrup and dust with more pumpkin pie spice and cinnamon if you like!
