Strawberry Salad with Maple Walnuts & Lemon Dijon Dressing
Here is a simple salad that is an excellent compliment to any meal, or on it’s own! A strawberry salad with maple walnuts and a lovely lemon vinaigrette.
Ingredients for the Salad:
Organic Strawberries
A beautiful blend of fresh salad leaves like: Mustard Greens, Lambs Lettuce, Rocket/Arugula, Frisée, Mesculn, Watercress, Escarole.
Chopped Walnuts (Maple or candied or not!)
Ingredients for Lemon Vinaigrette
Simply whisk together the lemon juice, mustard, agave or honey, olive oil, and salt & pepper to taste
1/4 cup olive oil
1/3 cup lemon juice
2 tbsp honey
2 tsp mustard
1/4 tsp salt (start there and taste it)
1/4 tsp pepper
Method
First, make your beautiful dressing. Next pour some of the dressing around the side of a large bowl. Then, fold greens upward, that way you don’t overdress your salad. Add more if needed. Move to your serving bowl. Slice the washed organic strawberries and add them to the top of the salad. Top with chopped candied walnuts, or plain walnuts!
The best thing about salads is that you can add anything else you like! For example, some thinly sliced green onions would be lovely on this salad!
How to make maple walnuts
These maple walnuts are so delightful to add to a salad. They make it feel special. Here’s now to make your own maple walnuts!
2 cups halved walnuts
1/3 cup maple syrup
1/8 tsp salt
Over medium heat, cook your walnuts with your syrup until the nuts toast! Add 1/8 tsp salt! It will probably be about 3 to 5 mins. Let cool before chopping further and adding to your salad.
