No Bake Protein Balls with Dates, Chia & Mini Dark Chocolate Chips

These are the perfect pre or post Pilates or Barre workout snack! And most of us here at Fittbe particularly love to enjoy one or two in the morning with coffee as we start our day calmly and deliciously!

No bake energy bites are a protein-packed, no-bake option! These are a bit less sweet overall than many recipes out there (thanks to halved honey + reliance on more dates for natural caramel-like sweetness) and adds that satisfying chocolate chip crunch. The combo of peanut + almond butter gives a great nutty flavor balance.

Ingredients for No Bake Nut Date Protein Bites

9 Medjool dates (pits removed, chopped into small pieces)

¼ cup crunchy natural peanut butter¼ cup natural almond butter (use crunchy if you want extra texture, or smooth for creaminess)

⅓ cup quick oats

2 tbsp chia seeds

1½ tbsp honey

½ tsp cinnamon

Pinch of salt

¼ cup mini dark chocolate chips (adjust to ⅓ cup if you want more chocolate)

2 tbsp hot water (start with this; you may need 1 extra tsp if the mix is too dry depending on the size of your dates)

How to Make No Bake Protein Balls

  1. Remove pits from the 9 Medjool dates and chop them into small pieces (this helps them blend in and act as a natural binder/sweetener).
  2. In a large bowl, add the chopped dates, peanut butter, almond butter, quick oats, vanilla protein powder, chia seeds, honey, cinnamon, pinch of salt, and hot water.
  3. Mix firmly with a wooden spoon or spatula to bring everything together into a crumbly mixture. Then switch to your hands and knead/press it into a cohesive dough. The extra dates should help it come together nicely even with less honey. If it still feels too dry/crumbly (unlikely with more dates), add 1 tsp more hot water. If it’s too wet/sticky, add 1 extra spoonful of protein powder or oats.
  4. Fold in the mini dark chocolate chips last so they stay intact and distributed evenly.
  5. Use your hands to roll the mixture into small balls (about 1–1½ tbsp each).
  6. Place the balls in the fridge (for a chewier texture) or freezer (for firmer) to set for at least 30 minutes.
