7 Color Salad Recipe

This salad is simply luxurious, bright, and incredibly healthy! The flavor combinations of mango, edamame, and tomato for instance, are unexpected and fabulous.

Ingredients for 7 Color Salad

One Avocado (Chopped)

1.5 – 2 heads Romaine Lettuce

1/4 cup chopped green onions

2 Cups Cherry Tomatos 

2 Cups Mango

2 Cups Broccoli 

1 Cup cooked shelled edamame 

1/2 Cup Beets

Cup of Avocado 

2 Cups Steamed Broccoli with a bit of Salt and a bit of butter or olive oil

Method for 7 Color Salad 

1.5 – 2 heads Romaine Lettuce chopped into bite sized pieces. Add 1/4 cup of chopped green onions. Dress with your favorite vinaigrette set aside. 

Cook the Edamame, and lightly salt. Cook the Broccoli and lightly add a bit of olive oil and salt. 

Build the salad. Line the longest side of the plate with the edamame. Then line the remaining fruits and veggies perpendicularly! Enjoy this bright & beautiful salad.
