Ingredients for Pumpkin Muffins
- 2 Cups All Purpose Flour
- 1/2 Cup Almond Flour
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon salt
- 1 tablespoon pumpkin pie spice
- 2 eggs
- 1/2 cup Milk
- 1/2 cup Greek Yogurt
- 1 cup pumpkin puree
- 1/2 cup maple syrup
- 3 tablespoons Olive Oil
- 1 teaspoon vanilla extract
Method for Pumpkin Muffins
We adore simple methods. You don’t even need to get out your big heavy mixer for this which is super!
Preheat your oven to 375 Degrees F. Prepare ten to twelve non stick baking cups. We adore these.
For the dry ingredients, whisk together 2 Cups All Purpose Flour, 1/2 Cup Almond Flour, 1 1/2 teaspoons baking soda, 3/4 teaspoon salt, and1 tablespoon pumpkin pie spice.
In a separate bowl, mix 2 eggs 1/2 cup Milk, 1/2 cup Greek Yogurt,1 cup pumpkin puree, 1/2 cup maple syrup, 3 Tablespoons Olive Oil, 1 Teaspoon vanilla extract.
Stir the dry ingredients into the wet ingredients, then add in a quarter of a cup dried cranberries, a handful of pumpkin seeds, and a quarter cup chocolate chips. You can add a few more to your taste, or add any type of nuts you like as well! Scoop the batter into 10-12 baking cups. We did 10 so they would be super tall!
Bake the muffins for 25 Minutes, until a toothpick comes out cleanly. Let sit for about 10 minutes, and hopefully enjoy warm!
