This salad is such a nice combination of flavors, the arugula adds a little peppery taste, the beets are sweet and the pepitas add great texture. Here’s the challenge with this salad, try to get all components into every single bite! It will be the best bit of salad you have ever tasted!
6 cups arugula
1 small, 3 oz log goat cheese
4 small beets peeled and steamed (you can find these pre-steamed and peeled at your local Trader joes or supermarket)
1 small avocado, sliced horizontally
2 tablespoons pepitas (Raw pumpkin seeds)
First and most importantly, use a teaspoon to scoop small pieces of goat cheese and roll into balls with your hands until you have about 10 cheese balls. Keep rolling until cheese balls look smooth. Set aside.
Slice beets and avocado into thin slices. Place arugula in a large bowl, dress with your favorite vinaigrette or simply olive oil and balsamic, toss to coat all leaves.
Assemble arugula leaves on a serving platter, shingle beets and avocado in altering layers on top of leaves. Sprinkle with goat cheese balls and pepitas.
Blueberry smoothies are an all time “Fittbe Fave”! Antioxidants galore, and the color seems to make them an extra treat! These blueberry smoothies are also so simple to make!
Healthy Blueberry Smoothie Recipe
1 cup of yogurt (greek yogurt is our favorite)
1 cup of blueberries (frozen)
1/2 cup of a second sweet fruit (eg. mango or strawberry)
3 tablespoon of vanilla protein powder (we love the one the carry at Trade Joes)
1 cup spinach leaves
3/4’s cup almond milk
Garnish with mint and a few whole fresh blueberries
Simply blend together in a good blender. If you like your smoothie a bit thicker, use less milk, and if you’d like it a bit more drinkable, use more! If you’d like it sweeter, we suggest just a bit of agave nectar!

16 Pumpkin Squats (No need to use a real pumpkin – but we did! LOL, you can use a weight instead of pumpkin), get nice and low, but make sure that you track your knees and keep your core engaged. For this first one just hold that pumpkin at chest height.

Chocolate Pumpkin Brownies from Lorna Jane Activewear’s Move Nourish Believe! The pumpkin in these is oh so healthy, and they taste delicious. Prep time is about 3 hours though, so do make sure you leave yourself some time!

For the Chocolate Lover
Now we know what you might be thinking – don’t all of these brownies feature chocolate? They are brownies! Well yes they do, but, Joy Food Sunshine has created these healthy greek yogurt brownies with chocolate ganache! Need we say more?
In an interview with Time, Dr. Walter Willett, chair of nutrition at Harvard School of Public Health suggested the excellent and energizing breakfast of “a combination of whole grains, nuts and fruit, plus a bit of yogurt.” We loved this idea – berries? Yes please, so here’s a great combo to try out this week:

-A cup and a half of mixed berries (blueberries, blackberries, raspberries and strawberries
Get your beautiful bread, and toast it up. Take your avocado and mash it up in a bowl with a little salt and pepper. Spread it on your toast. And now.. fry an egg as you desire, or add tomatoes to the top. Breakfast seriously never tasted so good. Our weekend plan calls for some buffalo mozzarella too!
